Bobcat DMX Tester / Cat 5 or XLR connector

This looks amazing - just what I need when busking with protable dimmers etc.
Looks ideal for remote focussing. I am a newbie to much of this though so forgive a couple of daft questions.
The project uses RJ45 connectors...can I simply wire in 3 or 5 pin xlr connectors in place of the RJ45?
Where do I purchase the pcb from? I have the component list from Mouser.
